What Are Chicken Zucchini Fritters?

These healthy zucchini chicken fritters are essentially chicken patties that are prepared by combining ground, fresh, or canned chicken with ingredients such as flour, eggs, and seasonings.

The mixture is then formed into small patties or balls and cooked in a skillet or oven until they achieve a delightful golden-brown hue.

You can enjoy chicken fritters as an appetizer, side dish, or main dish. They are commonly served with dipping sauces like barbecue sauce, garlic aioli, honey mustard, or ranch dressing.

Ingredients For Chicken Zucchini Fritters

These chicken fritters feature tender, juicy chicken, a touch of cheesiness, and just the right amount of seasoning.

Here's what you'll need:

  • Chicken - lean ground chicken meat or use ground turkey instead.
  • Zucchini - Different varieties of zucchini are available, depending on your location or what's in stock. Please feel free to use any type of summer squash you're accustomed to. If you have leftover squash, store it in the fridge so it lasts longer.
  • Green onion or chives - onions help infuse chicken patties with a wealth of delightful flavor, harmonizing all the tastes beautifully.
  • Flour - I’ve used just a few spoonfuls of oat flour in my chicken fritter recipe to provide structure and impart a delightful crispy texture. Feel free to use DIY gluten-free flour blend, almond flour or all purpose flour instead.
  • Eggs - eggs and zucchini bind the ingredients together, ensuring that the fritters maintain their shape during cooking.
  • Oil - Go for the finest quality olive oil. If olive oil is unavailable, you can also consider vegetable oil or avocado oil as suitable alternatives. When shopping for olive oil, watch for a fewimportant factors.

Can I Use Ground Chicken or Cooked Chicken?

Of course! I really enjoy the tender texture of ground chicken, but you can use diced chicken breast instead if you like.

The cooking time may vary and increase, check the patties for doneness with a kitchen thermometer (165 F).

Pre-cooked chicken works well as well. Use whatever you have for a quick lunch or snack.

Tips For Making Chicken Zucchini Fritters

  • I use two spoons to transfer the chicken mixture from the bowl to the skillet. You can also use a small ice cream or cookie scoop to make sure they're all the same size.
  • For more zucchini seasoning options, try garlic or onion powder, or a store-bought chicken seasoning blend.
  • Thicker zucchini patties need more cooking time. But don't overcook them, or they'll become dry.
  • To be sure they're cooked, break open one cooked fritter before taking them all out of the pan.
  • If fritters brown too much outside before cooking inside, your pan is too hot; lower the heat and use a good nonstick skillet.
  • Don't crowd the pan; cook cheesy chicken fritters in two batches if needed.
  • To reheat frozen leftover chicken fritters, use a skillet, toaster oven, or air fryer. Watch closely to avoid overcooking.
  • I like to keep zucchini unpeeled, especially when it's fresh and young. Younger zucchinis have better flavor and less bitterness and toughness.
  • If you're using skinless chicken breast or thighs, use a food processor to chop them—it saves time, effort, and cleanup.

How to Serve Chicken Fritters?

  • Enjoy them and your preferred dishes promptly (if you like them warm). They pair wonderfully with creamy mashed potatoes.
  • We also love marinated cucumber tomato salad, cucumber cabbage salad, avocado salad, or roasted potatoes.
  • Drizzling freshly squeezed lemon juice over these fritters creates a truly delightful flavor combination.
  • If you want a more wholesome and substantial meal, serve these fritters as a side dishor together with main courses such aschicken soupandcreamy carrot ginger turmeric soup.

With Dipping Sauces

  • Barbecue sauce
  • Buffalo sauce - for some added heat!
  • garlic Aioli
  • Green Goddess dip
  • homemade honey mustard sauce
  • avocado crema
  • salsa
  • sour cream
  • Ranch dressing

Freezing and Storing Leftover Fritters

  • To Store. Once the fritters are cooked, allow them to cool completely and store them in an airtight container for 3-4 days.
  • To Reheat. For best results, reheat in the oven. Alternatively, you can use an air fryer at 400 degrees Fahrenheit for 5 minutes, a microwave, or a nonstick skillet with minimal oil.
  • To Make Ahead. Preparing the zucchini fritter mixture in advance is easy. You can grate the zucchini 1-2 days ahead and store it in the fridge. When mixed with all the ingredients, the batter will chill nicely in the fridge for 2-3 days, resulting in slightly crispier fritters when cooked.
  • To Freeze. To freeze, place the cooked fritters in a glass container with a lid, adding layers of parchment paper between them. They will stay good for up to 2 months in the freezer. You can also freeze uncooked patties.

Chicken Zucchini Fritters Variations

These easy Chicken Fritters are already delicious.

Want to add more seasonings? These are my recommendations:

  • Extra cheese: Feel free to double the cheese! Experiment with cheddar or mozzarella cheese. Parmesan is another excellent choice!
  • Fresh herbs: Fresh dill, chives, cilantro, and parsley are excellent choices, and you can pick your favorite.
  • Air Fryer Variation: Place these chicken fritters in your air fryer for 10 minutes at 350 degrees Fahrenheit. Lightly spray with olive oil.
  • This recipe is an excellent way to sneak in some vegetables! Think grated carrots, finely chopped bell peppers, corn, and finely chopped spinach.
  • Sweet Potato Fritters

Cooking Ground Chicken Tips

Still, struggling with how to cook ground chicken? Here are my top tips that will help you.

How Long to Cook Ground Chicken

Cook ground chicken until it reaches 155°F inside.

This usually takes about 3-4 minutes in a skillet on medium-high heat, but the exact time can change depending on how much chicken you're cooking and how thick it is.

Remove from the heat and allow to rest 5-10 minutes to keep the chicken nice and juicy.

Now the chicken temperature should reach about 165 F.

How to Make Ground Chicken

To make ground chicken at home:

  1. Choose the Chicken: Select boneless, skinless chicken breasts or thighs.
  2. Cut into Chunks: Cut the chicken into smaller pieces suitable for your grinder or food processor.
  3. Grind the Chicken: Use a meat grinder or food processor to grind the chicken to your desired consistency.
  4. Avoid Overprocessing: If using a food processor, pulse the chicken until it's ground but not too finely.

How Long is Cooked Ground Chicken Good For

You can keep cooked ground chicken in the refrigerator for 3-4 days.

If you want to store it longer, you can freeze it for up to 3-4 months.

Make sure to use an airtight container or a strong freezer bag to keep it fresh.

NOTES

  • Nutrition calculated without the dipping sauce.
  • For more flavor add chopped onion, garlic, spinach to your ground chicken mix.
  • Squeeze a little bit of lemon or lime juice on top of hot chicken zucchini fritters before serving.
  • Flour - I like to use oat flour or my DIY gluten free flour blend.
  • I prefer using two spoons to transfer the chicken mixture from the mixing bowl to the skillet. However, you can also opt for a small ice cream scoop or a cookie scoop to ensure they're uniformly sized.
  • If the patties are thicker, they will need a bit more time to cook. The most important thing here is not to overcook the patties as they will become dry.
  • If you're unsure or want to be cautious, consider breaking open one fritter to check if it's cooked through before removing them all from the pan.

FAQs

Why are my zucchini fritters sticking to the pan? ›

If your zucchini fritters are falling apart, it's likely because the fritters are sticking to the skillet or the batter was too wet. Getting the zucchini dry before preparing the batter so the binding agents can hold the fritter together. If you have a non-stick frying pan, opt for that as well.

Why do fritters fall apart? ›

Typically, there is more than likely not enough of a binder in the fritter batter mix. Cheese, bread crumbs and eggs all act as binders and will help to hold these vegetable cakes in place. Fritters may also fall apart if you fail to use enough oil, or too much!

Why are my fritters tough? ›

Overmixing can cause the fritter to be gummy and tough. Only mix as much as you need to. I recommend skipping a mixer and doing this by hand to avoid overmixing. Use a cookie scoop.

How do you eat fritters? ›

Serve fritters with a dollop of sour cream, guacamole or avocado slices and sprinkle with finely chopped chives. Try with a dollop of relish, sweet chilli sauce or minted yogurt for additional flavour. You could also top with salsa or pico de gallo. Try my salsa recipes with either pineapple or kiwifruit.

How to stop fritters from sticking? ›

Fry: using just a little oil or a spritz of cooking spray, coat the bottom of a frying pan to avoid sticking. Once your pan is hot, add in the potato-egg mixture in the shape of pancakes, flipping once so that both sides are crispy.

Why are my fritters burning? ›

Make sure your frying oil is the right temperature—365 degrees is the sweet spot. Any hotter and the fritters might burn before they're done in the middle. Any cooler and they could absorb too much oil and not get crispy.

How do you firm up fritters? ›

Batter consistency is key to good fritters. If too runny, add a touch of extra flour (otherwise fritters soggy inside). If way too thick, add a touch of water.

How do you keep fritters crispy? ›

The best way to keep fried foods crispy? Just place them on a cooling rack set over a baking sheet. If you're frying multiple batches, throw the whole setup into a low oven to keep everything warm as you keep frying and adding to the rack.

What consistency should fritter batter be? ›

Instead of running from the spoon in a broad shining band, a consistency that the French call au ruban, the batter should start to run for about 1 1/2-inch length, then drop in successive long triangular “splats.” When the batter is this consistency, beat it until very smooth.

How do you know when fritters are cooked? ›

Let it sizzle! Your pan needs to be properly heated up before cooking. If the fritter doesn't sizzle when it hits the pan, you know it's not ready! Don't overcrowd the pan, as this causes the temperature of the pan to drop, resulting in limp, under-cooked fritters.

What does baking soda do in fritters? ›

So we use both to get the best of both worlds; Baking soda (bi-carb) OR baking powder – just a touch, to aerate the batter every so slightly (without it, it's slightly denser); Parmesan – for a good hit of savoury flavour AND to make the fritters extra crispy!

Why aren't my fritters cooking in the middle? ›

You may find that you need to reduce the heat under the pan during cooking. The fritters could also be a little too thick, meaning that the centres don't cook through quickly enough. When they are in the pan you need to flatten them with a spatula until they are about ½cm/¼ inch thick.

Do fritters need to be refrigerated? ›

Storage: Fritters will last in the fridge for about 1 week. They also freeze well. To reheat frozen fritters, place them on a parchment paper-lined baking sheet and heat in a 400°F oven until warmed through and crisp again, 10 to 15 minutes.

What is an American fritter? ›

A fritter is a portion of meat, seafood, fruit, vegetables, or other ingredients which have been battered or breaded, or just a portion of dough without further ingredients, that is deep-fried. Fritters are prepared in both sweet and savory varieties.

Which country invented fritters? ›

Originating in Native American cuisine, they are a traditional sweet and savory snack in the Southern United States, as well as Indonesia where they are known as perkedel jagung or bakwan jagung.

Why does my zucchini bread stick to the pan? ›

Generally, bread sticking to the pan is caused by one of two things: the coating in the pan or the temperature the bread was baked. Bread baked too hot will turn out gummy and dense, and will not have that perfect spring you are looking for.

How do you keep vegetables from sticking to the pan? ›

First, we recommend lining a prepared baking pan with oil or parchment paper to avoid sticking and make cleaning up easier. Then, put vegetables in a single layer on the pan by lifting them out of the bowl with a spoon, clean hands, etc. Don't pour the veggies directly from the bowl to the pan!

How do you get fritters to stick together? ›

This happens when there is not enough binder in the mix. I like to use Panko bread crumbs, 2 eggs, and cheese as binders. Fritters can also fall apart if they're stuck to the pan. Make sure to use enough oil, preheat the pan, don't flip too soon or too much, or you can use a non-stick cooking pan.

How do you keep zucchini crisp when cooking? ›

Don't overcrowd the pan, which can cause the zucchini to steam instead of roast. Unless you have time to salt and drain the zucchini, wait to salt it until after they're cooked so the salt doesn't draw out the moisture in the oven—this can lead to sogginess.
